I welcome you to THE best dip ever. No exaggeration. Once you make this, you will honestly never turn back. It’s just so unbelievably delicious and like no other dip you will have had before. And what I love about it, is that it works well at Christmas too because of the colours involved (#christmasaddict).
I can’t take credit for this creation – I got the recipe from my mum, who got it from her bestest chum, Marie. I love how recipes get passed along chains of people. It’s a bit like a culinary game of “chinese whispers” – recipes are whispered from one to another, and people add their own unique spin (ie. add and take away ingredients), before passing it along to the next recipient. How beautiful.

300g full-fat cream cheese
300g soft goats cheese
A handful of pomegranate seeds
Small bunch of chives, finely chopped
1/ Mix the cream cheese and goats cheese together until soft and creamy.
2/ Add the chives and pepper to taste.
3/ Carefully fold in the pomegranate seeds, keeping a few aside to sprinkle on top at the end.
4/ Garnish with the remaining pomegranate seeds, and a few chives.
5/ Serve with crisps/breadsticks/ or something similar.
