Miccles Cakes? Well – I LOVE LOVE LOVE Eccles Cakes, and if you know me at all, you’ll be well aware that Mince Pies become a staple food group in my diet for the month of December. So I’m bringing you a cheeky hybrid. Everyone loves a hybrid bake. Cronuts, hello?! Perhaps not quite as catchy. And certainly not a year-round affair. But delicious, none the less.
Now. If you want to go through the hassle of making puff pastry from scratch, then be my guest. But Mary Berry once told me (indirectly via the TV) that she saves time by using the ready-to-roll supermarket stuff, so I’m not wasting precious minutes that could be spent consuming mulled wine, wrapping presents, and being generally merry.
These zesty Miccles Cakes are delicious when warm. And just as scrummy cool! With a cuppa, or even some vanilla ice cream!
I’m currently celebrating Christmas at my paternal grandparents with my siblings. It’s German tradition to celebrate on Christmas eve – so we’re all full of roast pork, red cabbage, and all the trimmings! Next stop – present giving!
2 rolls of “Jus Rol Ready Rolled Puff Pastry” (320g each)
2/3 jar mince meat
zest one orange
1 egg, beaten
sprinkling of flour
butter to grease
2 tbsp caster sugar
curved/ regular muffin tray
1/ Preheat the oven to 200°C, and grease the muffin tin with butter.
2/ Unroll the pastry, and using a cookie cutter that is slightly larger in diameter than the muffin holes, cut 12 pastry circles. Gently press them into each hole.
3/ In a small bowl, mix the orange zest and mince meat until fully combined.
4/ Spoon a large teaspoon of the mixture into each muffin hole.
5/ Brush egg around the perimeter of each pastry circle, then cut 12 slightly smaller pastry circles, and press on top around the edge.
6/ Using a sharp knife, cut two parallel slits on each pastry lid, brush with egg wash, and sprinkle with sugar. Bake for 15 – 20 mins, until golden brown on top.
