The Tenth Bake Of Christmas: Cinnamon Star Cookies

I really loved baking the salt-dough tree decorations this year – they looked so pretty and homemade on the boarding house tree. And they smelt amazing – adding cinnamon was definitely a good move. The only issue was the hunger-inducung, mouth-watering effect one whiff of a decoration gave you. There is nothing more annoying than something that smells so good being inedible. It’s exactly the same problem I face everytime I walked into, or even just past, a LUSH shop. Why does it make me salivate? It’s soap for goodness sake!

So I thought an edible cinnamon cookie was a must on the twelve bakes agenda! I found the actual cookie recipe online, and then spruced it up with a royal icing drizzle and a highly necessary sprinkling of edible glitter! As the royal icing sets hard, these are another great one to pop in a cellophane gift back and give as delicious presents. Also – why not mix it up and do baubles with a red drizzle or even Christmas trees with a green drizzle and silver baubles? Get creative!!

for the cookies…
150g self-raising flour
150g plain flour
2 tsp cinnamon
125g unsalted butter
100g caster sugar
1 egg

for the decoration…
2 egg whites
300g icing sugar
Edible glitter/ sprinkles

1/ Preheat oven to 160 C. Mix butter, sugar, and egg together. Add flour and cinnamon to form a dough.
2/ Roll out between two sheets of baking paper, and cut out cookies using a star cutter.
3/ Bake on a lined baking tray for 15-20 mins, until golden brown. Leave to cool completely.
4/ To make royal icing, whisk egg whites until frothy. Add icing sugar a spoon at a time.
5/ Drizzle icing on cookies, and dust with glitter. Allow to set before munching!
