Marshmallow Flower Cupcakes

A couple of years ago, while browsing the cooking section in a bookshop in Canada, I came across a fantastic cupcake decorating book. Hello, Cupcake! by Karen Tack and Alan Richardson. I have picked up endless cake decorating books, but I had never found them original enough to be worth a buy. The decor ideas tended to be outdated, or not very well presented. Hello, Cupcake! is packed with quirky cupcake decor ideas, which use the simplest of ingredients – mainly sweets, chocolates and varying colours and piping styles of frosting.

For my sister’s last birthday, I downsized one of the recipes from Hello, Cupcake! – a marshmallow flower design. I cut in half diagonally pink, orange and yellow mini marshmallows, squeezed one corner into a point, and arranged into flower shapes on mini vanilla cupcakes – five petals to each flower. The cupcakes had been previously been frosted with baby pink vanilla buttercream. For the centre of the flowers, I used m&m’s. For the actual cupcakes, you can use any basic vanilla cupcake recipe. The Hummingbird Bakery recipe I used in my #birthday post would work perfectly. These were so simple to put together, and looked so uniform and pretty. Also – for regular sized cupcakes, you could either use large marshmallows, or use the small marshmallows with multiple rings of petals like in the book.
