It’s My Birthday, And I’ll Bake If I Want To!

Birthday Cupcakes

Those who have the pleasure of  knowing me will be fully aware that my birthday is my second favourite day of the year after Christmas. I even celebrate the evening before the main event – a.k.a Birthday Eve.

When I told people that I was going to bake cupcakes for my birthday, they thought it was ridiculous. But when you love baking as much as I do, there’s no better way to kick off the celebrations.

So that is exactly what I did. Last night, with the trusty help of my Hummingbird Bakery book, I baked 24 large and 36 mini vanilla cupcakes, complete with pink frosting and silver sprinkles. My mum bought me the book, and I am thoroughly enjoying working my way through the recipes. My friends seem to be enjoying it too. Funny that.

If you don’t own the book, I highly recommend purchasing it. I recently baked their Guinness Chocolate cake. It was rich, chocolatey deliciousness.

Anyway – I have posted the Hummingbird vanilla cupcake recipe below. I suggest using a free-standing mixer with the paddle attachment or a hand whisk. This recipe makes 12 cupcakes. Happy baking y’all!

(for the cupcakes)
120g plain flour
140g caster sugar
1 1/2 tsp baking powder
A pinch of salt
40g unsalted butter
120ml full-fat milk
1 egg
1/4 tsp vanilla extract

(for the frosting)
250g icing sugar
80g unsalted butter
25ml full-fat milk
1/2 tsp vanilla extract
Food colouring
Sprinkles

1/ Preheat the oven to 170C.
2/ Mix together the flour, sugar, salt, butter and baking powder on a low speed until the mixture is fully combined and of a sandy consistency.

3/ Add the vanilla extract and egg to the milk, and add gradually to the flour mixture. Mix until just incorporated.
4/ Fill your cupcake cases until 2/3 full and bake for 18-20 minutes or until a toothpick comes out clean.
5/ Set cupcakes aside to cool.
6/ For the frosting, beat the icing sugar and butter until combined.
7/ Combine the milk and vanilla extract in a separate bowl then add to the butter mixture and beat on high speed until light and fluffy.
8/ Mix in a food colouring of your choice!
9/ Pipe or spread each cupcake with frosting, and add sprinkles to jazz them up!
